The first time i made these i was in love. I texted my mom right away and asked if i could make dinner that night. Of course she said yes! So i made the crepes. They were a big hit with my family. Even my 5 year old brother loves them. :] The best part is that they are really easy to make and you can fill them with almost anything!
What you will need:
Crepes
1 cup all-purpose flour
1/2 teaspoon salt
1 1/2 cups milk
2 beaten eggs
1 tablespoon melted butter (make sure it is melted or you will get hole in your crepes)
2 tablespoons light brown sugar
1 tablespoon vanilla
Nonstick cooking spray
Filling
Banana's and whipped cream
Cream cheese filling
1 stick of butter
8 o.z. cream cheese
1 teaspoon vanilla
3 cups confectioner's sugar
1 tablespoon milk
To make filling combined all ingredients until smooth and set a side.
How to do it
To make Cream Cheese filling combined all ingredients until smooth and set a side.
In a small, heavy sausepan
Mix together the flour, salt, and milk until smooth. Add beaten eggs. Stir in butter, brown sugar and vanilla. Spray a 8 to 10-inch nonskick skillet with nonstick spray and heat pan over mediun heat until hot. Pour about 1/4 cup crepe batter into skillet, then immediately tilt pan to coat bottom evenly. Cook for about 1 minute, or until bottom is lightly browned. Flip and cook for about 20 seconds longer. Transfer to a plate and repeat with remaining batter.
Now to assembling
This is pretty much up to you. There are several ways to assemble a crepe but this is how i do it. Spread cream cheese filling in the middle of the crepe (whatever you think is enough) Then slice up a banana and place in on the filling. Roll up the crepe and top with whipped cream. Lastly Enjoy!
